Hey Guys! So this is my second recipe post, hope you find it incredibly useful.. Banana muffins are one of my favorite snacks because they are healthy and quick and easy to make. They're totally great for lunchboxes and you can even freeze them. I usually make them to use up any bananas that have browned slightly but fresh ones work just as good! Preparation - 10 mins, Cooking- 25mins, Total Time- 35mins.
Ingredients (serves 12)
- 200g (7oz) Plain Flour
- 1/2 teaspoon baking powder
- 1 teaspoon of bicarbonate of soda
- Pinch of salt
- 4 Large bananas (mashed)
- 150g (5oz) caster sugar
- 1 egg (medium)
- 75g of melted butter
Method
- Preheat the oven to Gas Mark 4/ 180 C and place 12 baking cases in a muffin tin.
- Sift flour, baking powder, salt and bicarbonate of soda in a mixing bowl and set aside.
- In a different bowl, mix mashed bananas, egg, sugar and melted butter then fold in flour mixture. Then stir until smooth.
- Spoon the mixture evenly into the cases in the muffin tin.
- Bake in oven for 25-30 mins
