Recipe No.1: Stuffed couscous bell peppers

A simple but tasty meal, and is one of my absolute favourites. So simple to make and perfect for dinner parties or just a delicious main course. You can really make them your own by mix-matching the herbs and other ingredients that you use. This recipe will serve 6 and you can swap the veggies if their not quite to your taste: Prep time; around 20-30 mins; Cooking time: 30 mins

You will need:

  • 6 large bell peppers (a mixture of colours)
  • 2 cups of cooked couscous
  • The juice of 1 lemon
  • 2 garlic cloves
  • 1 onion
  • 4-5 okra
  • 5 tbsp vegetable or sunflower oil
  • A handful of fresh coriander chopped
  • 85g of rennit free feta cheese 

Method:
  1. Preheat the oven to 200C/400F/Gas 6
  2. Chop the onion, garlic and okra into small chunks.
  3. Add the lemon juice, olive/vegetable oil, chopped coriander, garlic and onion to the couscous and stir, fluffing up the couscous with a fork.
  4. Cut the top off of the peppers and empty seeds.
  5. Divide the couscous mix into each of the six peppers evenly and sprinkle cheese over top.
  6. Replace the tops back onto the peppers and roast them on a roasting dish for about 30 mins.
